Cauliflower Pancakes

Cauliflower Pancakes

One cup of cooked cauliflower provides about 55 mg of the antioxidant vitamin and works well as the main ingredient in pancakes.

INGREDIENTS

SERVES 8

  • 1 Cauliflower (medium)
  • 2 egg(s)
  • 1/2 cup part-skim ricotta cheese
  • 1/2 cup Bread Crumbs Plain
  • 1 tsp extra-virgin olive oil

DIRECTIONS

1 Chop cauliflower into florets. removing the thick green center stem.
2 Boil florets in water until tender - about 10 minutes. Drain.
3 Next, mash the florets and add eggs, cheese and breadcrumbs into the mixture. Combine well.
4 Over medium heat, coat griddle with olive oil and once hot, add batter to the griddle, forming pancakes.
5 Cook pancakes until begin to form and turn a light brown. Flip and cook on the other side - about 2-4 minutes on each side.
