Cauliflower "Rice"

Many health conscious eaters looking for lower carb alternatives to starchy grain dishes will be delighted to learn that “ground” cauliflower is a fantastic substitute in dishes that call for rice or even couscous.

INGREDIENTS

SERVES 4

  • 1 Cauliflower (raw), Medium Head
  • 2 tbsp extra-virgin olive oil

DIRECTIONS

1 Chop cauliflower into smaller florets.
2 Add cauliflower to food processor and pulse florets until finely chopped. Be careful to not over process making cauliflower "mushy". This may need to be done in manageable batches.
3 Heat olive oil in a large pan over high heat and add cauliflower. Heat until the cauliflower begins to brown in places.
4 Season with salt and pepper to taste.
