Cauliflower Rice with Herbs

Cauliflower Rice with Herbs

For a low-carb, nutritious alternative to white rice, try “ricing” cauliflower instead.



  • 1 Cauliflower (medium)
  • 1 tbsp Coconut Oil, Organic, Unrefined
  • 2 tbsp Basil, Fresh
  • 1 tbls Parsley, Fresh


1 Break cauliflower into florets, removing thick, green stem.
2 Add florets into a food processor and pulse into fine pieces that resemble rice. Be careful not to over pulse so that they become mushy.
3 Next, in a pan over medium heat, add 1 tablespoon of coconut oil and food the cauliflower with onion for about 5-10 minutes.
4 Top with fresh herbs. Optional: You can add sliced cherry tomatoes, fresh lemon juice, sea salt and avocado.
