Cauliflower Soup

Cauliflower Soup

A common way to prepare cauliflower is as a puree in soups, either on its own with seasonings or mixed with other vegetables commonly used in pureed soups, like carrot or leeks.

INGREDIENTS

SERVES 6

  • 1 Cauliflower (raw), Medium Head
  • 2 tbsp Extra Virgin Olive Oil Mediterranean Blend Pure & All Natural
  • 2 clove Garlic
  • 1 onion
  • 4 cups Organic Vegetable Stock

DIRECTIONS

1 Chop the cauliflower into chunks, removing the leaves and core.
2 In a soup pot, add the olive oil and heat over medium heat. Add the chopped garlic and onion. Cook until onion is soft and translucent.
3 Next, add the cauliflower and stock and bring to a boil and then reduce the heat to a simmer. Cover the pot and cook until the cauliflower is soft. This will take about 15-20 minutes.
4 Remove from heat. Blend soup in a blender or use a hand-held immersion blender (much easier) until it reaches a pureed consistency.
5 TIPS: Add salt and pepper to taste. You can also try adding in leeks or carrots for a different flavor.
