Champagne Cobb-Style Salad

INGREDIENTS

SERVES 4

  • 1 1/2 cups White Beans
  • 3 1/2 tbsp Champagne Vinegar
  • 1 tbsp extra-virgin olive oil
  • 2 garlic clove
  • 5 leaf fresh basil leaves
  • 6 cups Mesclun Salad Mix
  • 16 Grape Tomatoes
  • 1/2 medium red onion
  • 1/4 cup Crumbled Cheese, Blue
  • 1 medium avocado
  • 1 pinch sea salt
  • 1 pinch ground black pepper

DIRECTIONS

1 Drain, rinse and divide beans.
2 Puree 1/2 cup of the beans, the vinegar, oil, garlic, and basil in a blender until smooth.
3 Toss together the creamy vinaigrette with the mesclun salad in a large mixing bowl and divide among four plates or pasta bowls. Top with the tomatoes, onion, blue cheese, avocado, and remaining 1 cup beans. (Hint: Use an avocado tool for perfect avocado slices to arrange on top of your salad.) Season to taste.
4 {WITH POULTRY, FISH, OR MEAT} one serving: Top one salad with 1/3 cup shredded rotisserie chicken breast meat or canned low-mercury tuna in addition to all other toppings.
