This light lunch of vegetable and cheese spread on crackers has protein, fiber, and omega-3s.

INGREDIENTS

SERVES 1

  • 2 celery stalk(s)
  • 1 carrot(s)
  • 1/2 red bell pepper
  • 1/2 yellow bell pepper
  • 7 walnut halves
  • 1 cup low-fat cottage cheese
  • 1 dash ground black pepper
  • 6 gluten-free crackers

DIRECTIONS

1 Mix veggies and walnuts with cottage cheese and add pepper to taste.
2 Serve with crackers for dipping.
