Cheesy Spaghetti Squash

Spaghetti squash has several times the RDA of vitamin A per serving as well as a host of B vitamins. When baked, the squash separates into "spaghetti" strands to which nearly any sauce can be matched because the flavor is so neutral.



  • 1 Spaghetti Squash - Whole
  • 3/4 cup Cashews, Organic, Roasted with Sea Salt
  • 3/4 cup chicken broth
  • 2 tbsp Nutritional Yeast Seasoning
  • 1 tbsp Tamari Sauce
  • 1 tsp Spices, turmeric, ground
  • 1 tsp Chives, raw


1 Preheat oven to 400 degrees F
2 Blend all ingredients except squash and chives in a blender until creamy; set aside
3 Slice spaghetti squash lengthwise and remove seeds and center pulp
4 Bake 45 minutes, or until soft, in a baking dish with 1 inch of water
5 Remove squash from oven and let cool before using a fork to loosen strands
6 Scoop strands into a bowl and add sauce; mix well
7 Garnish with a sprinkling of chives
