Chia Chocolate-Pistachio Bark

This three-ingredient bark is loaded with heart-healthy omega-3s and protein. It's made with melted chocolate combined with chia seeds and roasted, salted pistachios.



  • 10 oz Semi-Sweet Chocolate Chips
  • 2 tbsp Chia Seeds
  • 1/3 cup Roasted & Salted Shelled Pistachios


1 Line a large baking sheet with unbleached parchment paper.
2 Chop chocolate into small bite-size pieces. Alternatively, use high-quality chocolate chips.
3 In a double boiler (or heatproof bowl placed over hot water), gently melt chocolate over medium-low heat, stirring occasionally just until smooth.
4 Stir in chia seeds, immediately pour the chocolate onto the lined 9- by 13-inch baking sheet, and spread out using a spatula into an even layer, about 7 ½- by 11-inches.
5 Quickly sprinkle with the pistachios, slightly pressing them into the chocolate to adhere.
6 Refrigerate until firm, about 1 hour.
7 Peel off the parchment paper and break into about 16 large bite-size pieces (bark). Serve or store for later in the refrigerator.
