Chia Meatballs

Chia Meatballs

Because gluten and eggs are two of the most common food allergens, recipes that leave them out are becoming increasingly popular. Chia seeds can stand in for both in Italian meatballs.



  • 20 oz lean ground beef
  • 1/4 cup Tomato Paste
  • 3 tsp Italian Seasoning
  • 1 tsp Salt
  • 3 tbsp chia seeds


1 Combine beef, tomato paste, seasoning, salt and chia seeds in a bowl. Fully mix and let sit so the chia seeds can "gel".
2 Heat olive oil in a pan over medium heat. Once hot, begin to form balls (about 10) and add to the pan. Cook thoroughly until brown. Remove from heat.
