Chia and Quinoa Blueberry Breakfast Parfait

Combining chia, quinoa and berry superfoods makes this a rockstar breakfast. I like to make a big batch of quinoa on Sundays and enjoy it throughout the week. Quinoa is one of the fastest cooking whole grains.

INGREDIENTS

SERVES 4

  • 2 cups unsweetened almond milk
  • 1/2 cup chia seeds
  • 1 tbsp honey
  • 1 tbsp pure vanilla extract
  • 1 cup dry quinoa
  • 2 cups water
  • 4 cups blueberries

DIRECTIONS

1 TO MAKE CHIA FILLING:
2 Combine chia seeds, almond milk, vanilla extract and honey in a bowl. Mix well until combined and the mixture begins to thicken.
3 Cover and store in the refrigerator for at least one hour but overnight is best. If too thick, add more almond milk to thin out.
4 TO MAKE QUINOA:
5 Soak quinoa overnight or give it a good rinse before cooking.
6 Add water to a saucepan and bring to a boil.
7 Once a boil is reached, add in quinoa and turn down the heat to low. Cover and let it simmer gently for about 15 minutes - until all of the liquid is absorbed and the quinoa is "fluffy".
8 Let quinoa cool completely before building parfait.
9 TO MAKE PARFAIT:
10 In a dish, add a layer of quinoa, then chia pudding, then berries and repeat until ingredients are finished.
