Chia Wraps

Thankfully, chia seeds form a gel when exposed to water that can hold moisture, thicken and emulsify foods, and thus allow the tiny seed to replace these common allergens.

INGREDIENTS

SERVES 8

  • 1/4 cup Almond Flour
  • 1/2 cup chia seeds
  • 1/4 cup Flax Seed, Ground
  • 1/2 cup Raw Buckwheat Groats
  • 2 cups water
  • 1 tsp Salt
  • 2 tbsp oil

DIRECTIONS

1 Preheat the oven to 350F.
2 Line baking sheets (2-3) with parchment paper.
3 Blend chia seeds in a blender on high speed until very fine. Another option is to purchase chia seeds already ground.
4 Place ground seeds in a bowl with water (warmed in advance). Mix the mixture thoroughly.
5 Add the buckwheat to the blender and also grind until very fine.
6 In a bowl, combine the buckwheat flour with the almond flour, ground flax, salt and oil in a bowl and mix thoroughly.
7 Scoop about 1/4 - 1/3 cup of the batter onto the lined cookie sheet. You should be able to fit 2-3 wraps per pan.
8 Put the wraps in the oven for about 6 minutes and then flip the wrap to the other side for about 4 minutes.
9 Let the wrap cool on the paper for 1-2 minutes and then remove and place on a cooling rack.
