Chicken and Avocado Black Bean Soup

Canned soup gets dressed in colorful toppings, and gets extra protein from shredded chicken.

INGREDIENTS

SERVES 1

  • 4 oz raw boneless, skinless chicken breast
  • 1/4 medium avocado
  • 1/4 cup cherry tomatoes
  • 1/8 medium red onion
  • 1/4 lime
  • 1 1/2 cups canned black bean soup

DIRECTIONS

1 Using cooking spray, cook chicken in a non-stick pan over medium heat. Cook until browned on the outside and cooked throughout, about 5-7 minutes per side. Shred chicken.
2 Combine the avocado, tomatoes, onion, and juice of the lime. Set aside.
3 Prepare soup according to package directions and add chicken.
4 Pour into bowl and top with avocado-tomato mixture.
