Hash brown potatoes are certainly comforting. But if you need to cut down on your total carbs, know that hash doesn’t need to include potatoes for it to be enticing.

INGREDIENTS

SERVES 4

  • 2 medium zucchini
  • 4 link Sausage, Chicken, Italian, Hot & Spicy
  • 2 tbsp Oil, avocado
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 1 medium Onions, Diced Red
  • 1/4 tsp Sea Salt
  • 1 tsp lemon peel
  • 1/4 cup Parsley

DIRECTIONS

1 Slice each zucchini lengthwise in half, then crosswise into 1/2-inch pieces. Cut each chicken sausage link into 1/2-inch coins. Separately, set aside.
2 In an extra-large, deep, cast iron or other stick-resistant skillet over medium-high, heat the oil. Add the zucchini, bell peppers, and onion and cook while stirring until vegetables are cooked through, about 10 minutes. Season with the salt.
3 Add the sausage and cook while stirring until the sausage is fully heated and the vegetables are browned as desired, about 5 minutes more. Adjust seasoning.
4 Sprinkle with the lemon zest and parsley. Serve as is or with fried eggs.
5 Note: Serves 4 as a side or 2 as an entrée.
