Chickpea, Avocado and Red Onion Salad

It’s a win-win when you can serve something this healthful so deliciously. And that’s exactly what this vegan salad is all about.

INGREDIENTS

SERVES 8

  • 30 oz canned chickpeas
  • 1 medium red onion
  • 2/3 cup Salsa Verde
  • 1/4 cup fresh cilantro
  • 2 whole Avocado
  • 1/2 tsp sea salt

DIRECTIONS

1 In a large bowl, stir together the canned chickpeas, red onion, salsa, and fresh cilantro.
2 Gently stir in the avocados and salt until just combined.
