Chickpea and Cauliflower Soup

Like cauliflower, chickpeas also provide valuable amounts of the essential minerals calcium and potassium.

INGREDIENTS

SERVES 6

  • 1 Cauliflower (medium)
  • 1/4 cup extra-virgin olive oil
  • 1 onion
  • 2 medium stalks Celery
  • 2 garlic clove
  • 1 cup Unsalted Vegetable Cooking Stock
  • 1 pinch salt and pepper
  • 2 tbsp Parsley, Dried
  • 1 cup canned chickpeas

DIRECTIONS

1 Preheat the oven to 400ºF.
2 Chop cauliflower into florets removing leaves and thick, green center stem.
3 Toss together the cauliflower, 2 tablespoons of cup olive oil, salt and pepper to taste.
4 Place on a baking sheet and roast for about 10 minutes - until tender.
5 In a pot over medium heat, add remaining 2 tablespoons of olive oil and add onion, celery and garlic.
6 Next add stock, salt, pepper, parsley, chickpeas and roasted cauliflower. Turn the heat down to low and simmer until it begins to thicken - about 15 minutes.
