Beans and quinoa offer a unique twist on the traditional rice and beans dish. This combination is a nutritional powerhouse offering myriad benefits, from protein and fiber to vitamins and minerals like folate and potassium.
INGREDIENTS

1 lb Black Beans (dried)

1 cup Quinoa, Dry

1 Large Sweet Potato

1 medium Onion, Sweet

8 cups water

1 tsp Fresh Garlic

1/2 tsp Ground Coriander Seed

1/2 tsp Ground Black Pepper

1/4 tsp Cardamom
-
1/2 fruit lime
-
2 sprigs cilantro
DIRECTIONS

Rinse and dry beans and quinoa.

In a slow cooker, combine black beans, quinoa, sweet potato, onion, water with garlic, coriander, ground black pepper and ground cardamom. Stir to combine and cover.

Cook for 4 to 6 hours on high or 8 to 10 hours on low.

Season with salt when the stew is finished.

Serve with fresh lime wedges and chopped fresh cilantro.
