Chipotle Black Bean and Quinoa Stew

Beans and quinoa offer a unique twist on the traditional rice and beans dish. This combination is a nutritional powerhouse offering myriad benefits, from protein and fiber to vitamins and minerals like folate and potassium.

INGREDIENTS

SERVES 6

  • 1 lb Black Beans (dried)
  • 1 cup Quinoa, Dry
  • 1 Large Sweet Potato
  • 1 medium Onion, Sweet
  • 8 cups water
  • 1 tsp Fresh Garlic
  • 1/2 tsp Ground Coriander Seed
  • 1/2 tsp Ground Black Pepper
  • 1/4 tsp Cardamom

DIRECTIONS

1 Rinse and dry beans and quinoa.
2 In a slow cooker, combine black beans, quinoa, sweet potato, onion, water with garlic, coriander, ground black pepper and ground cardamom. Stir to combine and cover.
3 Cook for 4 to 6 hours on high or 8 to 10 hours on low.
4 Season with salt when the stew is finished.
5 Serve with fresh lime wedges and chopped fresh cilantro.
