Chocolate-Dipped Frozen Pineapple Mini-Pops

For a fun and tasty snack, try making these mini, chocolate-dipped pineapple pops. The cayenne in the chocolate coating delivers a surprisingly delightful kick.



  • 5 oz Bittersweet Chocolate, Organic, 65% Cacao
  • 1/8 tsp Spices & Seasonings, Ground Cayenne Pepper
  • 8 oz Pineapple Chunks, Fresh


1 Line a 9- by 13-inch dish with unbleached parchment paper. Set aside.
2 Insert the pineapple chunks onto bamboo picks or small skewers, placing on a paper towel-lined plate to absorb excess moisture.
3 In a double boiler (or heatproof bowl placed over hot water), gently melt chocolate with cayenne pepper over medium-low heat, stirring occasionally until smooth.
4 Dip each pineapple pop into the chocolate, letting excess chocolate drip off, then transfer to the parchment paper-lined dish.
5 Cover the dish and freeze until firm, at least 2 hours. Let stand for 5 minutes at room temperature before serving.
