In Philip Pullman’s 'The Golden Compass,' children are lured away from their parents with mugs of steaming hot chocolatl, given to them by the charming, beautiful Mrs. Coulter. If you can’t get your hands on the whole spices, you can use them in their ground form, or you can play around with some that work for you, if you like – you might fancy some nutmeg, or star anise, or pink peppercorns.

  • 10 1/2 oz 2% reduced-fat milk
  • 3 oz cream
  • 1 tbsp Bay Leaf
  • 4 pods or cardamom
  • 1 tsp cinnamon
  • 3 oz dark chocolate, (60-69% cacao)
  • 1 pinch Sea Salt
  • 1 tsp Golden Caster Sugar

1 Pour the milk and cream into a small saucepan. Add the spices and then bring the contents of the pan to a simmer over a low heat.
2 Chop the chocolate into chucks, add them to the milk, and allow to sit for ten minutes to melt the chocolate and intensify the spices. Taste, and season with salt and sugar.
3 Place back over the heat to warm through, then strain into two mug and serve.
