Chopped Salad with Tofu & Soy Nuts

This chopped salad is loaded with vegetables and includes soy nuts and tofu for protein.

INGREDIENTS

SERVES 1

  • 6 oz firm tofu
  • 1 red bell pepper
  • 2 carrot(s)
  • 1/3 cucumber(s)
  • 2 canned hearts of palm spears
  • 2 celery stalk(s)
  • 2 tbsp soy nuts
  • 1 tsp rice vinegar
  • 1/4 lemon

DIRECTIONS

1 Place tofu in salad bowl.
2 Add the vegetables and soy nuts to bowl.
3 Toss with vinegar and lemon juice.
