Cilantro Lime Cauliflower Rice

Wake up your taste buds by adding chopped fresh cilantro and a squeeze of fresh lime juice to plain cauliflower rice for a tangy and delicious side dish that is perfect to serve alongside your Mexican favorites.



  • 1 cup Water, tap, well
  • 1 medium White Onion
  • 1 clove garlic
  • 2 tbsp olive oil
  • 1 head medium Cauliflower, raw
  • 1 yields lime juice
  • 1/4 cup fresh cilantro


1 Puree the water, onion, and garlic in a blender until smooth.
2 Heat the extra-virgin olive oil in a large skillet over high heat and sauté the cauliflower for 3-to-5 minutes just until it starts to turn a light golden brown.
3 Stir in the onion and garlic puree. Season with salt and black pepper to taste.
4 Cover skillet and reduce heat to low. Let cauliflower rice simmer for 12-to-15 minutes until all the water has evaporated.
5 Gently stir in the lime juice and cilantro.
6 Sauté uncovered for an additional 3 minutes. Remove from heat.
