Cincinnati-Style Veggie Chili Bake (Family-Style)

In Ohio, Cincinnati chili is popular. It’s basically a uniquely spiced, meaty chili served over spaghetti, then topped as you like with Cheddar cheese, beans and onions.

INGREDIENTS

SERVES 4

  • 8 oz Whole Grain Penne
  • 15 oz Chili, Mild Three Bean
  • 1 1/2 tbsp red wine vinegar
  • 1 tsp Ground Cinnamon
  • 1/2 tsp Cocoa, Dry Powder, Unsweetened
  • 1/4 tsp Allspice, Ground
  • 1 cup Shredded Cheese, Cheddar
  • 1/2 cup Red Onion

DIRECTIONS

1 Prepare pasta in salted water according to package directions until al dente. Drain, reserving 1/2 cup of the cooking liquid. Rinse the pasta under cold water and drain again.
2 Meanwhile, stir together the chili, vinegar, cinnamon, cocoa powder, and allspice in a medium bowl. Then stir in the reserved 1/2 cup pasta cooking liquid.
3 Layer in a 2-quart baking dish, in order, half each of the pasta, chili (at room temperature), Cheddar cheese (or vegan cheese), and onion; repeat. Fully cover baking dish with aluminum foil (from top to bottom and bottom to top) and freeze.
4 To enjoy, keep well wrapped with foil and bake the frozen pasta dish in a 400°F oven until just heated through, about 2 hours 15 minutes. Remove foil and bake until cheese is golden and a top is slightly crisp, about 10 minutes more. (Hint: If desired, sprinkle with fresh cilantro at the table and serve with hot pepper sauce.)
