Craving cheesecake, but not craving all the calories that come with it? Cheesecake dessert hummus will have your taste buds completely confused. The resemblance in taste and texture to no-bake cheesecake is uncanny.

INGREDIENTS

SERVES 8

  • 15 oz Chickpeas (garbanzo beans, bengal gram), mature seeds, canned, drained, rinsed in tap water
  • 1/2 cup canned pumpkin
  • 4 oz low-fat cream cheese
  • 2 tbsp brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp Spices, pumpkin pie spice
  • 1/4 tsp Kosher Salt
  • 1 tbsp Almond Breeze Almond Milk

DIRECTIONS

1 Drain and rinse chickpeas. Remove skins by gently squeezing and separating skin from bean — discard skins.
2 Add chickpeas, pumpkin puree, cream cheese, brown sugar, cinnamon, pumpkin pie spice, salt and almond milk to a food processor.
3 Blend until smooth.
4 Serve with graham crackers and strawberries.
