Cocoa Mint Soft Serve Nice Cream

For this refreshing, dairy-free dessert, frozen bananas are the key ingredient to creating the sweet taste and creamy texture of the nice cream. With a hint of peppermint and added cocoa powder, this dish will count as a fruit serving!



  • 2 Banana, small
  • 2 1/2 tbsp unsweetened cocoa powder
  • 1/4 tsp peppermint extract


1 Peel and slice bananas. Arrange banana slices on a parchment paper-lined rimmed baking sheet, cover, and freeze at least 4 hours or overnight.
2 Add frozen banana slices, cocoa powder, and peppermint extract to a food processor. Cover and pulse until banana slices are finely chopped.
3 Then puree on high speed until smooth and creamy, about 2 minutes, scraping down sides as needed. (Hint: If you prefer just a hint of mint, add 1/8 teaspoon instead of 1/4 teaspoon peppermint extract.)
4 Enjoy immediately as soft-serve nice cream. Alternatively, freeze, scoop and serve. (Hint! Optional garnish: fresh mint leaves.)
