Coconut-Lime Arugula Salad with Fresh Herbs

This Asian-inspired salad by Seamus Mullen marries greens, fresh herbs and crunchy cabbage slaw with cilantro, mint, and basil. Pickled carrots add healthy probiotics, which promote good digestive health, while coconut-lime vinaigrette adds a much-appreciated, tropical twist.

INGREDIENTS

SERVES 1

  • 3 cups Arugula
  • 1 cup Mixed Greens
  • 3 oz rotisserie chicken breast
  • 1 oz Cabbage Slaw
  • 1 oz Pickled Carrots
  • 1 oz raw cashews
  • 2 oz Jicama
  • 9 sprigs cilantro
  • 1 serving mint leaves
  • 2 tbsp Basil, fresh

DIRECTIONS

1 Mix all the ingredients together in a big bowl.
2 Toss with coconut-lime vinaigrette (coconut oil, lime juice, and zest, rice vinegar, grated garlic, pepper, sea salt).
