Coconut Yogurt

Coconut Yogurt

DIY Coconut Yogurt (no additives!).

INGREDIENTS

SERVES 4

  • 1 can full-fat coconut milk
  • 1 probiotic capsule (opened)

DIRECTIONS

1 Shake coconut can and then open and add to a mason jar.
2 Add contents of the probiotic capsule and stir.
3 Let sit on counter until thickened (this may take 24-48 hours).
4 Remove about one-quarter of the thickened yogurt and use that as a future starter.
5 Add about 1 cup of fruit to the remaining thickened yogurt and blend.
6 If a thicken consistency is desired, add chia seeds (one tablespoon at a time) until desired thickness.
