Cold Peanut Butter “Noodles”

Move over pasta! This beautiful, raw “noodle” recipe doesn’t require commercial processing or cooking, just some fresh carrots and a vegetable peeler. Dressing the carrot “noodles” with a perky peanut sauce makes them extra memorable.

INGREDIENTS

SERVES 1

  • 2 tbsp Natural Peanut Butter
  • 1 1/4 tbsp brown rice vinegar
  • 2 tsp Tamari Soy Sauce
  • 2 tsp sesame oil
  • 1 1/2 tsp honey
  • 1 tsp Fresh Ginger Root
  • 14 oz Large Carrot
  • 2 stalk scallion(s)

DIRECTIONS

1 In a large bowl, whisk together the peanut butter, vinegar, soy sauce, oil, honey, and ginger.
2 Peel, then shred the carrots into long fettuccini-like “noodles” using a vegetable peeler (makes 10 ounces of carrot “noodles”). Add the “noodles” to the peanut butter mixture and toss until coated.
3 Sprinkle with the scallions. (TIP: For an herbal flair, use 2 tablespoons of chopped fresh cilantro instead of the 2 scallions).
