Colorful Rice-Pilaf

INGREDIENTS

SERVES 15

  • 16 tbsp Butter (tablespoon)
  • 3 cups Long-Grain White Rice
  • 2 cups Vermicelli Noodles
  • 4 cups Chicken Broth
  • 2 cups Champagne
  • 1 tsp Salt
  • 1/4 cup Pomegranate Arils
  • 1/2 cup Pistachios, Shelled, Roasted & Salted

DIRECTIONS

1 Melt butter in large saucepan.
2 Add dry rice and noodles to pan and sauté, stirring constantly, until rice is golden brown and makes a popping sound, approx. 7-10 minutes.
3 In a separate pot bring chicken broth and champagne to a boil. Slowly pour over rice mixture.
4 Add salt, dried cranberries, and pistachios.
5 Bring mixture to a boil, reduce heat to low, cover and simmer 25-30 minutes until all liquid is absorbed. Serve warm.
