Cottage Cheese Protein Pancakes

These protein-packed pancakes will give you the energy you need to start your day and the protein to keep your appetite in check. The simple, five-ingredient recipe comes courtesy of registered dietitian and blogger, Caroline Kaufman.



  • 1/2 cup Oats, Rolled
  • 1/2 cup 2% Cottage Cheese
  • 1 egg(s)
  • 1 tsp pure vanilla extract
  • 1 dash sea salt


1 Combine all ingredients together in a bowl. Lightly coat a non-stick pan with extra light olive oil or vegetable oil and heat on medium-high.
2 Once your pan is hot, add batter to make small or large pancakes as desired. Once batter starts bubbling (after a few minutes), flip and cook until golden brown, about 2-3 minutes.
3 NOTE: If you don't enjoy the texture as is, you can blend the ingredients before cooking so that it more closely resembles pancake batter.
