Cranberry-Orange Quinoa

This refreshing and vibrant dish is as delicious as it is nutritious. Containing all nine essential amino acids, quinoa is gluten-free, high in protein and an excellent source of fiber. Sweet and tart, cranberries offer anti-inflammatory and anti-cancer properties.

INGREDIENTS

SERVES 4

  • 1 cup Quinoa
  • 2 cups Water, tap, well
  • 1/4 tsp Sea Salt
  • 1 fruit orange
  • 1/2 cup Dried Cranberries
  • 2 tbsp Parsley, Raw Fresh

DIRECTIONS

1 Place the water in a pot over medium high heat and bring to a boil.
2 Add the quinoa and a pinch of sea salt, place the lid on the pot and turn the heat to low.
3 Simmer for 20 minutes.
4 Add the juice from the orange, the cranberries, and parsley. Mix well.
