Creamy Avocado-Cucumber Smoothie

This lean, green smoothie will re-energize your body with its refreshing minty flavor. Cucumber, apple, avocado, spinach and mint are only half of the ingredients found in this body-boosting drink. (Photo: Jackie Newgent)

INGREDIENTS

SERVES 3

  • 1 Yellow Apple
  • 1 Hass Avocados
  • 1 cup English Cucumber
  • 1 cup Baby Spinach
  • 10 leaf fresh mint leaves
  • 1/2 cup Unsweetened Green Tea
  • 1 tbsp Almond Butter, Creamy
  • 1/2 Peppers, serrano, raw
  • 1 1/2 tbsp lemon juice
  • 1 tsp Ginger Root
  • 1/2 tsp Sea Salt

DIRECTIONS

1 Core then grate the apple (do no peel). Halve, pit, and peel the avocado.
2 Add the grated apple, avocado halves, cucumber, spinach, mint, chilled green tea, almond butter, serrano pepper, lemon juice, ginger root, and salt to a blender. Cover and blend on high speed until velvety smooth, at least 3 minutes.
3 Pour into a pitcher and chill until ready to serve. If desired, sprinkle with freshly ground black pepper to serve. Alternatively, enjoy as a cool soup.
