Creamy Broccoli and Cauliflower Soup

INGREDIENTS

SERVES 4

  • 4 cups Cauliflower,raw
  • 4 cups Broccoli Florets
  • 2 cups Unsalted Chicken Broth
  • 1/2 cup Whole Milk
  • 1 cup Milk 2%
  • 3 tsp Vegetable Oil Spread
  • 1 tsp Black Pepper

DIRECTIONS

1 TOPPING: Low-fat sour cream and dill
2 DIRECTIONS:
3 Cook cauliflower and broccoli in large pot of boiling salted water until just tender, about 5 minutes. Drain and set aside.
4 Combine broth and milks in heavy large saucepan and bring to boil.
5 Add cauliflower, broccoli, and pepper to saucepan and return to a boil.
6 Remove from heat and cool slightly.
7 Working in batches, transfer mixture to a food processor and blend until smooth, about 30-45seconds per batch.
8 Serve soup with a dollop of sour cream and dill on top.
