Creamy Parmesan Cauliflower Puree

Forget mashed potatoes. Creamy Parmesan Cauliflower Puree is just as rich and satisfying without all of the excess fat and carbohydrates of traditional mashed potatoes. A food processor will help you to achieve a perfectly creamy puree. Serve this high quality vegetable with a protein like roasted chicken or even filet mignon for a balanced meal.

INGREDIENTS

SERVES 4

  • 1 serving Cauliflower Head Large
  • 1 tsp Thyme, Fresh
  • 1/4 cup Shaved Parmesan Cheese
  • 1 tbsp LEMON Juice, Fresh Squeezed
  • 1 tbsp extra-virgin olive oil
  • 3 pinch sea salt
  • 2 dash Pepper, White

DIRECTIONS

1 Steam cauliflower until very soft. Drain well.
2 Pulse cauliflower in a food processor until it breaks down into tiny pieces.
3 Add cauliflower, fresh thyme, Parmesan cheese, fresh lemon juice and extra virgin olive oil and pulse until smooth and creamy.
4 Season well with salt and white pepper to taste. Enjoy!
