Crispy Baked Salt and Vinegar Beet Chips

These crunchy beet chips are more than a trend – they are a satisfying source of vitamin C, fiber, and essential minerals like potassium, which help your muscles function properly. The sea salt and vinegar flavor is perfect for those times when you are craving store-bought chips but do not want to commit to high calories and bloating.

INGREDIENTS

  • 2 cups raw beets
  • 1/2 tbsp Sea Salt
  • 1 1/2 tbsp olive oil
  • 1/2 tbsp Apple Cider Vinegar

DIRECTIONS

1 Peel one medium red beet and one medium yellow beet and slice with a Mandolin into 1/16 inch thick pieces. Place in a large bowl and mix in salt.
2 Let the beets sit for 15 minutes to sweat out moisture, then place the slices onto a paper towel. Place another paper towel on top and press to soak up moisture. Then move the beets back into the bowl and mix in olive oil and apple cider vinegar.
3 Pre-heat oven to 350 F. Lay parchment paper on an oven-safe cooling rack and place the rack on a cooking sheet.
4 Place the sliced beets on parchment paper, with one layer not touching. This will let more moisture escape while baking.
5 Bake in the oven for 20 minutes.
6 Remove from oven and cool for 5 minutes before eating.
