Crock Pot Beef Shank & Black Bean Chili

Beef shanks are an inexpensive cut of meat that become incredibly tender when cooked in liquid. This gives you the health benefits of the bones, such as gelatin and collagen, without having to make bone broth separately, and also provides enough flavor that you can cook in water instead of stock. The algae oil adds richness, which is needed since shanks are lower in fat than other parts of the cow.

INGREDIENTS

SERVES 6

  • 3 cups Beef Shank Lean Raw
  • 4 cups water
  • 1 cup black beans
  • 2 oz Tomato Paste
  • 16 oz Diced Tomatos
  • 1/2 cup Anaheim Peppers
  • 2 tbsp Jalapenos
  • 1 cup Onions
  • 3 tbsp chili powder
  • 1 1/2 tbsp Algae Oil
  • 1 1/2 tsp Salt
  • 1 tsp Ground Cumin

DIRECTIONS

1 Notes:
  Use 3 bone-in beef shanks (about 3 cups of meat)
  Use jarred tomato paste, not canned, if possible
  Use dry black beans, preferably soaked for 8 hours and rinsed
2 Put slow cooker on high heat and add oil
3 Brown beef shanks, then add onion and fresh peppers; saute briefly
4 Add remaining ingredients and cook on high for four hours, or until beans are tender
5 Stir well, and cook uncovered to reduce liquid if desired
6 Remove bones from beef shanks once cooled
