Cruciferous Trio With Peanut Ginger Lime Dressing

You could eat regular high fat cole slaw to get in your daily dose of cabbages, but this updated version uses a peanut ginger lime dressing that will make you want to eat cruciferous vegetables every day.

INGREDIENTS

SERVES 4

  • 2 cups Shredded Green Cabbage
  • 2 cups Purple Cabbage Chopped
  • 2 cups raw Brussels sprouts
  • 1 medium raw carrots
  • 1 tbsp Lime Zest
  • 1/3 cup Peanut Butter, Natural, Creamy
  • 1 tbsp Lime Juice
  • 1 tbsp Honey
  • 1/2 tbsp Soy sauce made from soy (tamari)
  • 1 tsp ground ginger
  • 1 tsp Sesame Oil
  • 2 medium scallions
  • 2 tbsp Peanuts, virginia, raw

DIRECTIONS

1 Chop cabbage and Brussels sprouts and add to a serving bowl.
2 Cut carrots and add to cabbage.
3 In a small bowl, add zest, peanut butter, lime juice, honey, soy sauce, ginger and sesame oil.
4 Whisk to combine. If dressing is too thick, add a small amount of water to thin it out.
5 Drizzle over the cabbage and carrots and toss.
6 Top with chopped peanuts and scallions.
