INGREDIENTS

SERVES 4

  • 4 cups Shredded Red Cabbage
  • 1 medium red onion
  • 1 serving apple
  • 1/2 cup Dried Black Currants
  • 1/2 cup Pecans
  • 3 tsp Salt
  • 1/4 cup Tahini
  • 3/4 cup Orange Juice
  • 4 Lemon Wedge Juice, Raw
  • 1 tbsp Extra Virgin Olive Oil
  • 1 tbsp Honey Raw
  • 2 tbsp Garlic
  • 1 tbsp Fresh Ginger Root
  • 1 dash Pepper, Black

DIRECTIONS

1 For the dressing:
2 Combine tahini, orange and lemon juice, olive oil, honey, garlic, ginger, 1 teaspoon of salt and pepper in a blender or food processing and pulse until smooth.
3 To prepare the salad:
4 Place strips of cabbage into a large bowl.
5 Add salt and massage into cabbage with hands until well combined (to wilt the cabbage a bit for easier digestion). Let this sit for 5 minutes.
6 Mix the onion, apple and currants with the cabbage.
7 Pour dressing over salad and combine thoroughly.
8 Garnish with pecans.
9 This salad is best served chilled. Store in fridge for up to 3 days.
