Crunchy Tuna & Feta Salad

This tuna salad is filled with nutritious veggies and the flavors of the Mediterranean.

INGREDIENTS

SERVES 1

  • 6 oz chunk lite tuna (in water)
  • 1 tsp capers
  • 2 celery stalk(s)
  • 1 carrot(s)
  • 1/4 lemon
  • 2 cups chopped romaine lettuce
  • 2 tbsp low-fat feta cheese
  • 1 tsp balsamic vinegar
  • 6 gluten-free crackers

DIRECTIONS

1 Drain water from can of tuna. Place in bowl with capers, chopped celery and carrots.
2 Squeeze lemon in bowl and mix in tuna.
3 Place mixture on bed of lettuce and top with feta cheese and balsamic vinegar and olive oil.
4 Serve crackers on side.
