Daikon, Salmon and Quinoa Grain Salad

In this colorful slaw, the flavors of crisp daikon pair perfectly with parsley, salmon and carrots.

INGREDIENTS

SERVES 3

  • 1/4 cup Olive Oil, Extra Virgin
  • 1/4 cup Apple Cider Vinegar
  • 1/2 tsp Minced Garlic
  • 1/2 tsp Sea Salt
  • 1/2 tsp Ground Black Pepper
  • 3 cups Daikon (Raw)
  • 3 medium raw carrots
  • 1 cup Parsley
  • 1 Salmon Canned Ready-to-eat
  • 1 1/2 cups cooked quinoa

DIRECTIONS

1 To make the dressing, mix the olive oil, cider vinegar, minced garlic, sea salt and black pepper together. Set aside.
2 Toss the daikon radish, carrots, parsley, wild salmon and quinoa together.
3 Add the dressing to the salad, and toss everything together.
