In this colorful slaw, the flavors of crisp daikon pair perfectly with parsley, salmon and carrots.
INGREDIENTS

1/4 cup Olive Oil, Extra Virgin

1/4 cup Apple Cider Vinegar

1/2 tsp Minced Garlic

1/2 tsp Sea Salt

1/2 tsp Ground Black Pepper

3 cups Daikon (Raw)

3 medium raw carrots
-
1 cup Parsley
-
1 Salmon Canned Ready-to-eat

1 1/2 cups cooked quinoa
DIRECTIONS

To make the dressing, mix the olive oil, cider vinegar, minced garlic, sea salt and black pepper together. Set aside.

Toss the daikon radish, carrots, parsley, wild salmon and quinoa together.

Add the dressing to the salad, and toss everything together.
