Dark-Chocolate-Covered Strawberry Oatmeal

If you prefer carbs in the morning, this is a bowl of delight. It seriously tastes like dessert, but it is way better for you, thanks in part to the steel-cut oats.

INGREDIENTS

SERVES 1

  • 3/4 cup unsweetened almond milk
  • 1/2 cup water
  • 1/4 cup Oats, Steel Cut
  • 1/2 cup Sliced Strawberries
  • 1 tsp honey
  • 1 pinch sea salt
  • 1/2 oz Chocolate, Bittersweet

DIRECTIONS

1 In a small saucepan, bring the almond milk and water to a boil over high heat. Stir in the oats and bring back to a boil. Reduce heat to medium-low and simmer uncovered, stirring a few times, until nearly done (about 22 minutes). Stir in the strawberries, honey and salt and simmer until fully cooked, about 5 more minutes. (TIP: You can use either fresh or thawed frozen strawberries.)
2 Ladle into a bowl, sprinkle with the chocolate,and serve.
