Rich in protein from the Greek yogurt, Date & Coconut Yogurt with Pistachios will help to boost your metabolism and keep you energized by stabilizing your blood sugar levels. Find shelled pistachios in bulk at your local supermarket.

INGREDIENTS

SERVES 1

  • 1 cup Plain Greek Yogurt
  • 1/4 cup Organic Unsweetened Light Coconut Milk
  • 1/2 tbsp agave nectar
  • 1/2 tsp pure vanilla extract
  • 2 Whole Fresh Dates
  • 1 tsp Pistachio

DIRECTIONS

1 Combine Greek yogurt, coconut milk, agave nectar, vanilla, and dates in a Nutribullet or blender until dates are broken down. Chill the yogurt mixture for 10 minutes in a glass or jar. Garnish with chopped pistachios. Enjoy!
