Dijon Chicken and Peppers Lettuce Wraps

Lettuce as a wrap cuts calories in this dish.

INGREDIENTS

SERVES 1

  • 7 oz raw boneless, skinless chicken breast
  • 1 tbsp Dijon mustard
  • 2 romaine lettuce leaves
  • 1 oz fresh part-skim mozzarella cheese
  • 1 cucumber(s)
  • 1/4 red bell pepper
  • 1/4 yellow bell pepper

DIRECTIONS

1 Using cooking spray, cook chicken in a non-stick pan over medium heat. Cook until browned on the outside and cooked throughout, 8 to 10 minutes per side.
2 Spread mustard on lettuce leaves. Evenly distribute the chicken between the lettuce leaves.
3 Evenly distribute the chopped vegetables and place on chicken and top with cheese.
4 Roll up lettuce to make a “wrap”.
