Asparagus and White Bean Dinner Salad

Who said a salad can't be delicious and protein packed? This is a great meal, even for vegetarians and those who follow a gluten-free diet.

INGREDIENTS

SERVES 1

  • 1 egg(s)
  • 4 asparagus spears
  • 2 cups chopped romaine lettuce
  • 1 cucumber(s)
  • 1/2 cup sliced mushrooms
  • 1/2 cup canned white beans
  • 1 tsp capers
  • 2 tsp walnut oil
  • 1 tsp white wine vinegar
  • 1 dash salt and pepper

DIRECTIONS

1 Place egg in a small saucepan and cover with cool water by one inch. Over medium heat, bring water to a boil. Once water begins to boil, cover and remove from heat. Let sit for about 5 min and then run under cool water. Slice egg.
2 Chop asparagus stalks roughly and steam for 5 min.
3 Mix together all ingredients in a bowl except for oil, vinegar, salt and pepper.
4 Whisk walnut oil with vinegar, salt, and pepper, and toss with salad.
