Dragon fruit, also known as pitaya, has a host of B vitamins that will be fully retained without cooking. While this scrumptious dessert looks complex, it takes just a few minutes to make and has only five ingredients, including optional rosewater. (Paleo, vegan, gluten-free)
INGREDIENTS

2 cups coconut milk

2 tbsp Dragonfruit (pitaya)
DIRECTIONS

Refrigerate coconut milk or cream for at least four hours; do not shake

Open container and scoop solids into a bowl; discard gooey water underneath

Whip milk solids with a whisk until fluffy, about five minutes

Stir in dragon fruit puree*

If desired, for a sweeter end product you can add sugar, stevia, or other sweetener to taste.
