Leftover rice from dinner the night before? Mix in a few ingredients and you have a delicious, high-protein egg dish.

INGREDIENTS

SERVES 1

  • 3/4 cup Steamed Brown Rice, Medium-grain
  • 1 Hard Boiled Eggs
  • 1 tsp Tamari Soy Sauce
  • 1 stalk scallion(s)

DIRECTIONS

1 If using chilled cooked rice, reheat it in the microwave (or in a skillet over medium heat) until steaming hot.
2 Sprinkle with the egg, soy sauce, and scallion.
3 (Hint: Chinese or Thai takeout rice leftovers work great!)
