Easy Blood Orange Asparagus Saute

When asparagus is cooked, its antioxidants are activated, so this is a good choice to eat cooked instead of raw. Sauteing it with citrus brings an unexpected brightness to the asparagus.

INGREDIENTS

SERVES 6

  • 6 spear , medium raw asparagus
  • 1/2 Blood Orange
  • 2 tbsp olive oil
  • 3/4 tsp Salt, Table
  • 1/4 tsp Black Pepper

DIRECTIONS

1 Heat a large pan on medium high heat
2 Add olive oil and heat for 30 seconds
3 Add asparagus and cook, stirring occasionally, for 10 minutes or until tender-crisp
4 Remove from heat and add remaining ingredients
5 This recipe is Paleo, vegan and gluten-free.
6 *I used blood oranges for their unique color and the anthocyanins that make it red, but if they aren’t in season, regular oranges will still be excellent.
