A highly popular and Insta-worthy breakfast, avocado toast certainly deserves its praise. With its nearly 20 vitamins and minerals, avocado qualifies as a superfood – and adding a poached egg not only enhances its flavor, but also supplies 6 grams of protein and 4.7 grams of unsaturated fats. It's the perfect, filling breakfast that will power you up through the morning!

INGREDIENTS

SERVES 1

  • 1 large whole egg
  • 1/3 cup Water, tap, well
  • 1/2 tsp White Vineger
  • 1 slice whole-wheat bread
  • 1/2 Avocado

DIRECTIONS

1 Crack the egg into a microwave-safe bowl.
2 Pour in about 1/3 cup of water.
3 Add 1/2 tsp of vinegar (optional).
4 Cover the bowl with a microwave-safe plate and place in the microwave. Cook on 50% to 80% power for 60 seconds.
5 Remove from the water with a slotted spoon.
6 Place on avocado toast.
