Easy Roasted Eggplant

This is a quick delicious addition to any meal. Heck its a meal in itself.

INGREDIENTS

SERVES 4

  • 1 1/4 lb Eggplant [medium]
  • 1/4 tsp Salt
  • 2 second All Natural Extra Virgin Olive Oil Non-stick Cooking Spray
  • 2 tbsp Balsamic Vinegar
  • 1 1/2 oz Parmesan Shaved Cheese

DIRECTIONS

1 Turn on Broiler.
2 Rinse eggplant and slice into 1/3 inch slices.
3 Place slices on paper towel and sprinkle with salt. Let stand 10 minutes. Press the top of the eggplant to remove moisture and salt.
4 Repeat on other side.
5 Prep baking sheet with foil and non-stick spray.
6 Drizzle the tops of the eggplant with the balsamic vinegar.
7 Broil 5 min or until brown on each side.
8 When second side is completed, sprinkle with the Parmesan cheese.
9 Back into the broiler for 2 minutes.
10 Remove and let cool for 3-5 minutes.
