Soy has taken a lot of criticism over the past few years, but the research remains strong on its health benefits. Edamame is a soybean that has been removed from its pod and can be eaten plain, in salads, or as a snack.

INGREDIENTS

SERVES 4

  • 1 1/2 cups Edamame, frozen, unprepared
  • 2 cups Button Mushrooms
  • 1 tbsp Shallots, raw
  • 2 tbsp White Wine Vinegar
  • 2 tbsp Olive Oil, Extra Virgin
  • 1 tsp Oregano
  • 1/2 tsp Kosher Salt
  • 1/8 tsp Pepper, Ground Black

DIRECTIONS

1 Thaw edamame and add to a small mixing bowl.
2 Add remaining ingredients and stir.
3 Refrigerate for at least 1 hour.
4 Serve cold.
