Egg and Canadian Bacon Breakfast Sandwiches

Making a hearty, healthy breakfast in advance is the best way to get the day off to a good start.

INGREDIENTS

SERVES 12

  • 12 slices Canadian Back Bacon
  • 12 Egg
  • 1 tsp salt and pepper
  • 1/3 cup Mild Cheddar Cheese, Shredded
  • 12 whole-wheat English muffin

DIRECTIONS

1 Preheat oven to 350 degrees and spray a jumbo muffin pan with nonstick cooking spray.
2 In each well of the muffin pan, place 1 slice Canadian bacon and top with 1 whole egg.
3 Season with salt and pepper and top with a sprinkle of shredded cheddar cheese.
4 Bake 15 minutes, then cool completely. Place each patty between a toasted whole-grain English muffin.
5 Wrap in parchment paper, then in foil; freeze.
6 To reheat, remove foil and microwave sandwich 45 seconds, or until hot.
