This dish resembles a healthier version of traditional breakfast sandwich....but scrambled.
INGREDIENTS

1 whole-grain bread slice(s)

2 Free Range Egg

2 tbsp fresh chives

1/8 tsp Salt

1 1/2 oz Organic Ham

1 1/2 tsp grapeseed oil
DIRECTIONS

Toast the whole grain (or sprouted grain) bread.

Meanwhile, in a medium bowl, whisk together the eggs, chives, and salt. Stir in the ham.

Heat the oil in a large (PFOA-free) nonstick skillet over medium.

Dice the toast.

Add the egg mixture to the skillet. Cook while stirring until softly scrambled, about 1 1/2 minutes. Add the diced toast, remove from heat, and stir until the toast is softened, about 30 seconds.
