Egg, Organic Ham and Toast Scramble

This dish resembles a healthier version of traditional breakfast sandwich....but scrambled.

INGREDIENTS

SERVES 1

  • 1 whole-grain bread slice(s)
  • 2 Free Range Egg
  • 2 tbsp fresh chives
  • 1/8 tsp Salt
  • 1 1/2 oz Organic Ham
  • 1 1/2 tsp grapeseed oil

DIRECTIONS

1 Toast the whole grain (or sprouted grain) bread.
2 Meanwhile, in a medium bowl, whisk together the eggs, chives, and salt. Stir in the ham.
3 Heat the oil in a large (PFOA-free) nonstick skillet over medium.
4 Dice the toast.
5 Add the egg mixture to the skillet. Cook while stirring until softly scrambled, about 1 1/2 minutes. Add the diced toast, remove from heat, and stir until the toast is softened, about 30 seconds.
